The entire smoked fish process, from fresh king fish caught offshore in the Tri-county area. The fresh king fish is then filleted and deboned. Our fish is cleaned and the process brining begins with a soy sauce water solution for 2 hours. The fresh king fish is then smoked to perfection for a total of 8 hours.
